The 2020 is packed with dark fruit, mocha, new leather, spice and espresso. It emerges from vineyards at elevation in the Ruffoli district. The deep, saline finish is seriously impressive. The 2020 is superb.
– ANTONIO GALLONI · Vinous
Palafreno offers plenty of hedonistic delight on the table with its velvety texture and a savoury, sustained finish. It pairs naturally with Italian cuisine, standing up well to the acidity of tomato-based dishes and even a touch of heat. With older vintages, it shines alongside richer, earthier foods that allow its varietal depth to unfold.
· Cacio e Pepe (V)
· Pumpkin gnocchi with sage butter (V)
· Parsnip, chestnut and cranberry loaf (VG)
· Peposo (Tuscan black pepper beef stew)
· Roast turkey with chestnut and mushroom stuffing

· Cassoulet with white beans and Toulouse sausage
· Slow-roasted pork shoulder with smoked paprika rub
A Classic match
Filet mignon stands as a timeless favourite, its tenderness and subtle flavour offering the perfect canvas for Palafreno’s depth and finesse. The texture of the meat mirrors the wine’s velvety tannins, while the richness of the red wine reduction amplifies its dark fruit core and savoury complexity.
